- 4 boneless, skinless chicken breasts
- 1 lemon (zested and juiced)
- 1 tbsp olive oil
- 2 cups baby carrots
- 1 cup broccoli florets
- salt & pepper (to taste)
Instructions
Step 1: Place the chicken breasts in the slow cooker.
Step 2: Drizzle the olive oil, lemon juice, and zest over the chicken.
Step 3: Add the baby carrots around the chicken in the slow cooker.
Step 4: Add salt, pepper, and any additional seasonings.
Step 5: Cook on low for 4-5 hours or high for 2-3 hours, until the chicken is cooked through.
Step 6: About 30 minutes before serving, add the broccoli florets on top of the chicken, cover, and continue to cook.
