2 slices of whole grain bread
1 ripe avocado
2 eggs
½ cup of halved cherry tomatoes
Instructions
- Toast the whole grain bread slices until golden brown.
- While the bread is toasting, mash the ripe avocado in a bowl with a fork until smooth.
- In a separate skillet, fry or scramble the eggs to your preference.
- Once the toast is done, spread the mashed avocado evenly on each slice.
- Top the avocado toast with the cooked eggs.
- Arrange the halved cherry tomatoes on top of the eggs.
