1 can (15 ounces) chickpeas (garbanzo beans), drained and rinsed
1 cup diced cucumber
1 cup cherry tomatoes, halved
1/4 cup chopped fresh parsley
Whole wheat or spinach wraps (4)
Instructions
- In a large mixing bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, and chopped fresh parsley.
- Toss everything together until well combined.
- Warm the wraps slightly if desired.
- Spoon the chickpea salad onto each wrap, dividing it evenly among them.
- Roll up the wraps tightly, enclosing the filling.
- Cut each wrap in half diagonally, if desired, and serve.
