Mediterranean Chickpea Salad Wraps

Ingredients

1 can (15 ounces) chickpeas (garbanzo beans), drained and rinsed

1 cup diced cucumber

1 cup cherry tomatoes, halved

1/4 cup chopped fresh parsley

Whole wheat or spinach wraps (4)


Instructions

  1. In a large mixing bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, and chopped fresh parsley.
  2. Toss everything together until well combined.
  3. Warm the wraps slightly if desired.
  4. Spoon the chickpea salad onto each wrap, dividing it evenly among them.
  5. Roll up the wraps tightly, enclosing the filling.
  6. Cut each wrap in half diagonally, if desired, and serve.
