Quinoa Salad with Black Beans and Avocado

  • 1 cup of cooked quinoa
  • ½ cup of canned black beans (rinsed and drained)
  • 1 ripe avocado, diced
  • ¼ cup of chopped, fresh cilantro
  • Juice of 1 lime


Instructions

  1. In a mixing bowl, combine the cooked quinoa, black beans, diced avocado, and chopped cilantro.
  2. Squeeze the lime juice over the quinoa salad.
  3. Gently toss all the ingredients together until well combined.
  4. Taste and adjust seasoning with salt and pepper if desired.
  5. Divide the quinoa salad into individual containers or pack it in a portable container to take with you.
