- 1 boneless pork loin roast (3 to 4 pounds)
- 1-1/2 cups apple juice
- 1 can (4 ounces) chopped green chiles, drained
- 3 garlic cloves, minced
- 1-1/2 teaspoons salt
- 1-1/2 teaspoons hot pepper sauce
- 1 teaspoon chili powder
- 1 teaspoon pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 4 flour tortillas (8 inches) for serving
Instructions
- Place the pork loin roast into your 5- or 6-quart slow cooker.
- In a small bowl, mix together the apple juice, green chiles, minced garlic, salt, hot pepper sauce, chili powder, pepper, cumin, and oregano. Pour the mixture over the pork in the slow cooker.
- Cover and cook on low for 6-8 hours, or until the pork is tender and can easily be shredded with a fork.
- Once the pork is cooked, remove it from the slow cooker and allow it to cool slightly. Shred the meat with two forks, then return it to the slow cooker and stir to combine with the cooking liquid.
- Serve the shredded pork in flour tortillas with your favorite toppings, such as fresh cilantro, diced onions, or a squeeze of lime.
