Berry Cobbler Bowl

Description
A warm meal filled with fiber and protein to balance blood sugar. Travels well for aviation professionals. Can be made in advance and stored in a hotel mini fridge or cooler and then warmed at meal time.
Ingredients
1/4 cup Old fashioned rolled oats
1 scoop Protein powder
1/2 tsp Vanilla Extract
1 tbs Nut Butter
1 tsp Milk
120g Mixed berries
1 tsp Lemon Juice
Instructions
1. Preheat the oven to 325 degrees. In a 4-5 inch oven safe ramekin, add the berries and squeeze a little lemon over top.
*I made 4 servings (x recipe by 4) and I used frozen berries.
2. In a separate bowl, add the oats, protein powder, nut butter, milk and vanilla. Stir well until the ingredients come together in small clumps.
3. Spoon crumble mixture over the berries in an even manner. Place the ramekin in the oven (or if making 4 servings, I used a square metal or glass pan.) Bake for 15-18 minutes or until the top begins to brown and feel crisp.
4. Allow the crumble to cool before enjoying.
5. If taking on trips, I packed each serving into individual containers. This meal will sustain for about 3 days. I ate one serving at home and then traveled with the other 3.
